My friend Jane had a lovely holiday party recently and served this delicious cocktail. She graciously shared her recipe with me and I want to share it with you. Pomegranates are in season now and are nutritious. There are so many different things you can do with pomegranates. I like to sprinkle them on my oatmeal, add them to my yogurt or toss them in a salad. And, now, add them to my champagne.
Ingredients:
3 pomegranates, seeded (Check out this video from Jamie Oliver’s Home Cooking Skills on how to easily remove the seeds.) Reserve 1/4 cup of seeds for garnish.
1 bottle Champagne or sparkling wine, chilled
Method:
There are different ways you can get the juice from your pomegranates. You can blend them in a blender then pour through a sieve or use a lime press to press the juice out.
Pour 2 ounces of champagne into a flute glass. Add about eight of the pomegranate seeds. Pour in a 1/2 teaspoon or more of pomegranate juice and top that off with 2 ounces of champagne. Serve immediately.
