Arugula and Lemon Pasta

This quick and delicious pasta dish is ready in less than 20 minutes and has one of my favourite greens – arugula.  The lemon and peppery arugula pair well with each other.

Ingredients:

1 8-ounce package pappardelle pasta (I like Trader Joe’s Lemon Pepper Pappardelle for this recipe.)

3 or 4 handfuls of arugula (about 4 cups)

2 teaspoons grated lemon zest

2 tablespoons lemon juice

Salt and pepper

2 tablespoons extra-virgin olive oil

1 cup grated Parmesan or Pecorino cheese, plus more for garnish

Method:

In a large pot of boiling salted water, cook the pasta according to the package instructions.

Meanwhile, in a large bowl, whisk together the lemon zest, lemon juice and olive oil; season with salt and pepper.  Add the arugula and toss to combine.

Drain the pasta and immediately add it to the arugula along with the cheese.  Toss to combine and if needed season with additional salt and pepper.

Serve with grated cheese on top if you like.
