Ginger-spiked Avocados

Who doesn’t love avocados?  I served these avocados at a party that I catered and everyone loved them – they were gone minutes.  It is simple, looks pretty and tastes heavenly.

Ingredients

3 ripe avocados

juice of two lemons

2 tablespoons dark soy sauce

1 tablespoon balsamic vinegar

2 teaspoons finely grated fresh root ginger

freshly ground black pepper

sprigs of dill or Italian parsley, to garnish

Method

Slice the avocados in half and remove the pit.  To extract a complete half from the skin, soak a large spoon in a mug of boiling water for a few seconds, then use it to quickly slide between the skin and the flesh at the narrow end of the avocado in one smooth move.  Sprinkle lemon juice over the avocados and use your hands to gently coat them all over.  Place on a platter or individual serving plates.

Mix together the soy sauce, vinegar and ginger and drizzle over the avocados or pour into the pit hole.  Finish with a good grinding of black pepper and decorate with sprigs of dill or parsley.

Serves 6

Tip:  Prepare these as close to serving time as you can.
